Recipe: Vanilla Cupcake with Raisin

I baked vanilla cupcake last Saturday and it turned out soft and moist.

And the smell is too good too! ;)

Looks good, right? And so the taste too! :)

Try out this simple recipe! :
Vanilla Cupcake with Raisin (for 15 cupcakes)
Ingredients:
  • Self-raising flour (200gm)
  • Butter (200gm) - melt
  • Caster sugar (200gm)
  • 4 eggs
  • 1 tea spoon Vanilla essence
  • Raisins
  • 4 table spoon milk
  • 1 table spoon horlicks (optional)
  • 1 table spoon nestum (optional)
Directions:

  1. Pre-heat the oven 200 degrees 
  2. Whisk the self-raising flour, horlicks, and nestum in a bowl.
  3. Beat butter and caster sugar until fluffy.
  4. Beat in the egg, one at a time.
  5. Beat in the vanilla essence.
  6. Beat in half of the self-raising flour, horlicks and nestum mixture, then the milk, then the remaining flour mixture.
  7. Beat in raisins until just combined. (See the picture)
  8. Divide the batter among the cake cups, filling each three-quarters full. Bake until a toothpick inserted into the center of a cupcake comes out clean.

The original recipe is actually without horlicks, nestum and raisins. :P
I am gonna try to replace the caster sugar with brown sugar after this.
